The equipment for filling the various kinds of containers with a fixed quantity of seishu, also known in Japanese as fira- (フィラー, filler) and juten-ki (long “u” , 充填機); bottling or filling machine. There are various kinds according to the volume and material of the container, and there are also machines which can handle multiple container varieties.
The method of filling may rely on controlling the level, volume or weight of liquid.
The conventional system sees sake bottled directly after being heated to 64-68℃, but it is increasingly common to find sterilized nama-zake being cold-bottled, or heated sake being rapidly cooled and then filled at room temperature in a sterile environment.
