The tank for holding and cooling mashing water (shikomi-sui). The place where this tank is located is called the mizu-ba (水場, “water place”). Generally, well water is drawn and transported by pump or tanker.
Before water-cooling equipment became common, it was usual to situate the mizu-ba outside in a breezy, north-facing location to cool the water naturally over a day or two, but now shikomi-sui is cooled by machine to a set temperature.
The water is filtered to remove impurities in preparation for filling the tank, and the amount of water per batch is calculated in order to keep it fresh.
